Why I do what I do...

Image
Why do I do what I do? Hmm, thoughts to ponder I am sure for everyone of us. But I am not talking about everyone else, just myself. At this present time in history I am the Food Services Manager here at Camp Evergreen. I get to plan, cook, order food, make sure I am somewhat close to my budget (wink, wink, nudge, nudge) and to generally make sure that anything pertaining to food and the kitchen is running smoothly. Especially the part about the food. Which most people seem to like, at least according to John's blog post. I do love what I do. I have been cooking as a career for close to 20 years. During that time I have had opportunity to work in some good spots, I wouldn't necessarily say top of the line places. But good places to learn. After finishing some time at Bible school, I felt God calling me to finish my cook training. I finally finished my training in 2002 and was certified as a Red Seal cook in 2003. My first time cooking at Camp Ever...

Where to eat?

It’s a question that has plagued mankind for centuries, do I stay in and make myself Kraft dinner or do I go out and spend my hard earned money at McDonalds?  That is a question that I have not needed to ask myself for the past two years, due to the fact that here at Camp Evergreen we have the honour of having Ken as a chef.  If you have ever been to camp you know what I mean.  Ken's commitment to good food has always meant that the food is above and beyond that of a normal meal.  Some of these meals would include, but are not limited to: burgers fresh off the barbecue with all the trimmings, pancakes with strawberry sauce and whipped cream, chili with corn bread muffins, juicy chicken breast, fresh veggies, pizza, bacon (of course), and so so so many more.  And if you have one of those special diets don't worry about it, as long as Ken knows he will prepare something just as amazing for you.  Ken is like that. He wants everyone to feel they are getting...

As many of you are aware we are working hard to update some of our facilities out here at camp.  To those of you reading this you are probably thinking that Cabin Fever is what I am referring to here but actually I'm not referring to Cabin Fever at all.  We have just installed BRAND NEW kitchen counter tops!! Yes, it's out with the old and in with the new. Steph working on removing the old counter tops We were excited to have Brad from Legacy Kitchens in Calgary come out to build and install our new counters for us.  He did an excellent job! Before Brad could even start working in the kitchen we needed to remove all the drawers and cupboards as well as well anything and everything that was in the kitchen to start with.  Your probably wondering where we put the whole contents of the kitchen as construction was going on.  Well where else would we put it but in the dining hall!! All the contents of the Kitchen in the Dining Hall There are tw...

Ken's Granola Bars

Image
Ahh, the swhoosh, swish of skates on ice, the crack of the stick against the puck, the pass, the tip, he shots he scores!!! The spectators go crazy!! What a game, what an event, what a granola bar!!! Whoa, back up here, weren't we just talking about hockey? A little. Recently, like back in January, we at Camp Evergreen hosted our Second Annual 3-on-3 Pond Hockey Tournament. It was a roaring success. Especially the granola bars. From a kitchen perspective, events are a success when people like the food. And the granola bars were well received. “Granola Bars ROCK!!” and “Granola bars rocked” [Kerry has to enter the dialogue here to apologize for the fact that we didn't take even one picture of the granola bars. Ooooops. I'll include a picture of Dave being a human zamboni instead. But if we had a picture of the granola bars, you'd be saying ...] It just makes you want to run to the kitchen and make a batch. Ok, team, lets do it!! Camp Evergreen's Secret R...
